What makes really special the extra virgin olive oil is its preventive effect against many diseases. In particular, the salutary effects of this valuable nutrients regard:
- reduces the secretion of gastric acid by promoting an inhibitory action of gastric and duodenal ulcers, in fact, use of olive oil in ulcer patients has greatly reduced injuries and in most cases, has resulted healing; - also contributes to improving the tone and activity of the gall bladder.
-stimulates gastric secretions for a better digestion;
- protects the intestinal mucosa and the mucosa of the stomach and therefore may be useful in gastric deseases;
- increases the production of bilethat need for intestinal absorption;
- leads to increased production of digestive enzymes;
The diet rich in animal fat and saturated fat increases the amount of cholesterol in the blood and represent major risk factor for cardiovascular diseases.

A diet rich in extra virgin olive oil helps to maintain low levels of LDL (bad cholesterol) while it doesen't decrease the levels of HDL (good cholesterol), which is protected by monounsaturated fat (prevalent use of extra virgin olive oil).
Scientific epidemiological studies, published in international medical journals such as Seven Country Study, the Framingham Study, the Veterans Administration study, the MRFIT study, LCR, CPPT, mfabio have shown that in subjects fed a diet rich in unsaturated fats (primarily monounsaturated) and low in saturated fatty acids (prevalent use of extra virgin olive oil):
1decreased circulating LDL cholesterol;
2decreased by 31% the incidence of myocardial infarction and 30% of cases of sudden death;
3reduceed systolic and diastolic, compared with subjects who continued to eat a diet rich in animal fats and margarine.
